Arrange the mini pepperoni slices evenly on the prepared tray, leaving space between each slice.
Sprinkle shredded mozzarella and cheddar cheese evenly over each pepperoni slice.
Add a small dot of pizza sauce on each chip, then sprinkle with oregano, basil, garlic powder, and chili flakes if using.
Lightly top with sliced olives or chopped bell peppers if desired.
Bake for 8–10 minutes, or until the cheese is melted, bubbly, and lightly golden.
Remove from the oven and let the chips cool for 2–3 minutes to crisp up, then transfer to a serving plate and serve warm.
