Ingredients
  

  • 1 lb beef chuck, cut into bite-sized cubes
  • 8 oz fresh mushrooms, sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream or coconut cream
  • 2 tablespoons olive oil or avocado oil
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped

Method
 

  1. Prepare the Beef: Trim excess fat and cut beef into bite-sized pieces. Season with salt and pepper.
  2. Sear the Beef: Heat oil in a large pot over medium-high heat. Sear beef in batches until browned. Remove and set aside.
  3. Sauté the Aromatics: In the same pot, sauté onions, celery, and garlic until translucent.
  4. Add Mushrooms and Spices: Add mushrooms and cook for five minutes. Stir in thyme, rosemary, smoked paprika, and bay leaf.
  5. Combine Beef and Broth: Return beef to pot, add beef broth, bring to a boil, then simmer for forty-five to fifty minutes until beef is tender.
  6. Add Cream: Stir in heavy cream or coconut cream and simmer for five to ten minutes to slightly thicken.
  7. Season and Serve: Adjust salt and pepper, remove bay leaf, garnish with parsley, and serve.

  • Use chuck, brisket, or stew meat for tender beef.
  • Browning beef adds depth to flavor.
  • Optional low-carb vegetables: zucchini or spinach.
  • Can be made in a slow cooker on low for six to eight hours.
