Ingredients
  

  • lb boneless, skinless chicken breasts
  • 1 tablespoon butter
  • ½ cup onion, finely chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 stalks celery, sliced
  • 8 oz cream cheese, cubed
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ cup shredded cheddar cheese
  • 1 cup sliced mushrooms
  • cups cauliflower rice
  • 2 tablespoons fresh parsley, chopped

Method
 

  1. Sauté onion and garlic in butter if desired, or add them directly to the pot/slow cooker.
  2. Place chicken in the slow cooker (or pot), add chicken broth, celery, and seasonings; ensure chicken is mostly covered.
  3. Cook until chicken is tender (slow cooker: low 6–7 hours or high 3–4 hours; stovetop: simmer 20–25 minutes).
  4. Remove chicken, shred with two forks, then return to the pot.
  5. Cut cream cheese into small cubes, add gradually while stirring, and keep heat low until fully melted and smooth.
  6. Stir in spinach at the end and let it wilt 2–3 minutes; optionally add heavy cream or shredded cheddar for extra richness, then serve.

Notes

  • Use full-fat cream cheese for best texture; let it sit at room temperature for about 10 minutes before adding.
  • Keep soup at a gentle simmer (don’t boil) and stir continuously while cream cheese melts; use a whisk or immersion blender if needed to smooth.
  • Optional add-ins/variations: hot sauce + smoked paprika (buffalo style), ranch seasoning + bacon, mushrooms, or “loaded” toppings like cheddar, green onions, and bacon.
