Ingredients
  

  • 8 flour tortillas
  • 6 eggs
  • ¼ cup milk
  • 1 cup cooked sausage, crumbled
  • 1 cup shredded cheddar cheese
  • ½ cup diced onions
  • ½ cup diced bell peppers
  • ½ cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup sour cream
  • ¼ cup fresh cilantro, chopped
  • Cooking spray or butter for greasing

Method
 

  1. Preheat your oven to three hundred seventy-five degrees Fahrenheit (one hundred ninety Celsius) and lightly grease a nine-by-thirteen-inch baking dish.
  2. Cook the sausage in a skillet over medium heat until browned and fully cooked; drain excess grease.
  3. Sauté onions and bell peppers for three to four minutes, then add garlic powder, chili powder, salt, and black pepper; cook two more minutes with diced tomatoes.
  4. Whisk eggs and milk together, pour into the skillet with vegetables, and cook until eggs are just set.
  5. Lay tortillas flat, fill with egg, sausage, and veggie mixture, sprinkle with cheese, roll, and place seam-side down in the baking dish.
  6. Sprinkle extra cheese on top, bake for fifteen to twenty minutes until cheese melts and tortilla edges are lightly crispy.
  7. Let cool slightly, top with sour cream and cilantro if desired, and serve.
