Method
- Place the chicken in the crockpot.
- In a bowl, mix soy sauce, honey, rice vinegar, garlic, and ginger.
- Pour the sauce over the chicken.
- Cook on low for 6–7 hours or high for 3–4 hours.
- Remove the chicken and shred it using two forks.
- Mix cornstarch and water, then stir into the crockpot.
- Cook on high for 10–15 minutes until the sauce thickens.
- Return shredded chicken to the crockpot and mix with the sauce.
- Serve hot.
