Easy Crockpot Teriyaki Chicken

Ingredients
  

  • 2 lbs boneless, skinless chicken thighs (or breasts)
  • 1 cup soy sauce
  • ½ cup honey or brown sugar
  • ¼ cup rice vinegar
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (or 1 tsp ground ginger)
  • 2 teaspoon cornstarch
  • 2 teaspoon water

Method
 

  1. Place the chicken in the crockpot.
  2. In a bowl, mix soy sauce, honey, rice vinegar, garlic, and ginger.
  3. Pour the sauce over the chicken.
  4. Cook on low for 6–7 hours or high for 3–4 hours.
  5. Remove the chicken and shred it using two forks.
  6. Mix cornstarch and water, then stir into the crockpot.
  7. Cook on high for 10–15 minutes until the sauce thickens.
  8. Return shredded chicken to the crockpot and mix with the sauce.
  9. Serve hot.

Notes

  • Use chicken thighs for juicier results; breasts may be leaner but can dry out.
  • Adjust sweetness by increasing or reducing honey or sugar.
  • Serve with rice, noodles, vegetables, or lettuce wraps.
  • Add vegetables like broccoli or bell peppers for extra nutrition.
