  • cups almond flour
  • 2 tablespoons coconut flour
  • cup powdered erythritol
  • 1 teaspoon baking powder
  • 2 eggs
  • ¼ cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Oil for frying
  • 2 tablespoons almond milk
  • ½ teaspoon vanilla extract

Method
 

  1. In a bowl, mix almond flour, coconut flour, powdered erythritol, baking powder, and salt.
  2. In another bowl, whisk eggs, almond milk, and vanilla extract.
  3. Combine wet and dry ingredients to form a soft dough.
  4. Roll the dough into small bite-sized balls.
  5. Heat oil in a pan over medium heat.
  6. Fry the donut balls in batches until golden brown, about 2–3 minutes.
  7. Remove and place on paper towels to drain excess oil.
  8. Mix glaze ingredients until smooth.
  9. Dip or drizzle glaze over warm donut balls.
  10. Let the glaze set slightly and serve.
