  • ¾ oz simple syrup
  • 8 fresh raspberries
  • 1 cup ice cubes
  • 1 egg white
  • 1 lemon slice

  1. Add fresh raspberries to a cocktail shaker and muddle gently to release juice.
  2. Pour in gin, fresh lemon juice, and simple syrup.
  3. Add egg white if using and shake without ice for 10 seconds.
  4. Add ice cubes and shake again for 15–20 seconds until chilled.
  5. Strain into a chilled coupe glass or rocks glass filled with fresh ice.
  6. Garnish with fresh raspberries or a lemon slice.
  7. Serve immediately.
