Ingredients
  

  • 3 zucchini
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ½ cups marinara sauce
  • 2 cloves garlic,minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Preheat the oven to three hundred seventy five degrees Fahrenheit and lightly grease a baking dish with olive oil.
  2. Slice the zucchini lengthwise into thin strips, sprinkle lightly with salt, let them rest for ten minutes, then pat dry.
  3. In a bowl, mix ricotta cheese, mozzarella cheese, Parmesan cheese, garlic, basil, parsley, salt, and black pepper until well combined.
  4. Spread marinara sauce evenly over the bottom of the prepared baking dish.
  5. Place a spoonful of the ricotta mixture onto each zucchini slice and roll it up gently.
  6. Arrange the zucchini rolls seam side down in the baking dish.
  7. Spoon the remaining marinara sauce over the rolls.
  8. Bake uncovered for thirty minutes until the sauce is bubbling and the cheese is melted.
  9. Remove from the oven and let rest for five minutes before serving.
