  1. Wash the sweet potatoes thoroughly, peel if desired, and cut them into evenly sized fries about one quarter inch thick.
  2. Place the cut fries in a bowl of cold water and soak for thirty minutes, then drain and pat completely dry.
  3. Toss the dry sweet potato fries with cornstarch until lightly coated.
  4. Add olive oil, salt, black pepper, smoked paprika, and garlic powder, then toss until evenly seasoned.
  5. Preheat the oven to four hundred twenty-five degrees Fahrenheit and line a baking tray with parchment paper.
  6. Arrange the fries in a single layer on the tray without overlapping.
  7. Bake for twenty minutes, flip the fries, then bake for another fifteen to twenty minutes until golden and crispy.
  8. Remove from the oven and serve immediately.
