Heat olive oil in a wide skillet over medium heat. Add chopped onion and cook until soft and translucent. Stir in garlic and cook briefly until fragrant.
Add tomato passata and tomato paste. Season with salt, black pepper, Italian seasoning, and chilli flakes. Simmer until the sauce thickens slightly.
Lower the heat and stir in the cream until fully combined and smooth.
Add gnocchi directly to the skillet and gently stir. Simmer until the gnocchi is tender and coated in sauce.
Remove from heat, stir in fresh herbs, and serve topped with torn burrata and optional Parmesan.
