Ingredients

  • 1.5 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 1 cucumber, grated and squeezed dry
  • 1 tablespoon fresh dill, chopped
  • 4 pita breads
  • 1 cup lettuce, chopped
  • 1 cup tomatoes, sliced or diced
  • ½ cup red onion, thinly sliced
  • ¼ cup feta cheese, crumbled

Method

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and black pepper.
  2. Add chicken and coat well. Marinate for 15–30 minutes if possible.
  3. Heat a skillet over medium heat and cook chicken for 5–7 minutes per side until fully cooked.
  4. Let the chicken rest for a few minutes, then slice or chop into pieces.
  5. Grate the cucumber and squeeze out excess water.
  6. In a bowl, mix Greek yogurt, cucumber, olive oil, lemon juice, garlic, salt, pepper, and dill (if using).
  7. Warm pita bread in a dry skillet for 20–30 seconds per side.
  8. Fill each pita with chicken, lettuce, tomatoes, and red onion.
  9. Spoon tzatziki on top and add feta if desired. Serve immediately.

Notes

  • Chicken thighs stay juicier than chicken breast.
  • Always squeeze cucumber well to keep tzatziki thick and creamy.
  • Keep tzatziki separate for meal prep to prevent soggy pitas.
  • Swap pita with lettuce wraps or serve as a rice bowl for a lighter option.
  • Add cucumbers, olives, or extra feta for more Greek flavor.
