Keto Lava Cake Delight Recipe

Ingredients
  

  • ½ cup almond flour
  • ¼ cup unsweetened cocoa powder
  • cup erythritol or monk fruit sweetener
  • 2 large eggs
  • 3 tablespoons butter (melted)
  • ¼ cup heavy cream
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • 1 pinch salt
  • 2 squares (about 20 g) sugar-free dark chocolate

Method
 

  1. Preheat oven to 180°C (350°F) and grease two ramekins.
  2. In a bowl, mix almond flour, cocoa powder, baking powder, salt, and sweetener.
  3. Add eggs, melted butter, heavy cream, and vanilla extract; mix until smooth batter forms.
  4. Divide half the batter into ramekins, place chocolate squares in the center, and cover with remaining batter.
  5. Bake for 10–12 minutes until edges are set and centers remain soft.
  6. Let cool for 2 minutes, gently invert onto a plate, and serve warm.

Notes

Recipe Notes:
  • Do not overbake to maintain the molten center.
  • Use high-quality cocoa powder for better flavor.
  • Can substitute chocolate center with sugar-free peanut butter.
  • Serve with whipped cream or keto ice cream.
  • Makes 2 servings (2 small lava cakes).
