Method

  2. Refrigerate the mixture for at least 4 hours or overnight, stirring once after 30 minutes to avoid clumps.
  3. Blend ripe mango into a smooth puree.
  4. Layer chia pudding and mango puree alternately in serving glasses.
  5. Top with diced mango and shredded coconut.
  6. Serve chilled.
