Ingredients
  

  • 2 lb baby potatoes or Yukon gold potatoes
  • 7 oz feta cheese block
  • 5 cloves garlic
  • ¼ cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Method
 

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the potatoes, then cut them into evenly sized chunks.
  3. Spread the potatoes on a large baking tray. Drizzle with olive oil and season with salt, black pepper, and dried oregano. Toss until evenly coated.
  4. Scatter the garlic cloves around the tray and place the feta block in the centre.
  5. Roast for 40–45 minutes, turning the potatoes halfway through, until golden and crisp.
  6. Remove the tray from the oven and gently press or break the baked feta so it lightly coats the potatoes.
  7. Garnish with fresh basil if using and serve warm.

  • Cut potatoes evenly to ensure consistent roasting.
  • Baby potatoes or Yukon gold potatoes give the best texture and flavour.
  • Keep the feta block whole while baking for a creamier result.
  • Add a drizzle of olive oil after baking for extra richness.
  • Fresh basil can be replaced with parsley or thyme if preferred.
