Ingredients
  

  • 2 cups cucumbers
  • 2 cups tomatoes
  • ½ cup red onion
  • 2 tablespoons olive oil
  • 1 tablespoons fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley
  • ¼ cup feta cheese
  • ¼ cup kalamata olives

Method
 

  1. Dice the cucumbers into small chunks.
  2. Chop the tomatoes into bite-size pieces.
  3. Thinly slice the red onion.
  4. Add cucumber, tomato, and onion to a bowl.
  5. Drizzle olive oil and lemon juice over the salad.
  6. Sprinkle with salt and black pepper.
  7. Toss gently until evenly coated.
