  • 1 cup cottage cheese
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried herbs
  • teaspoon black pepper

Method
 

  1. Blend the cottage cheese in a blender until completely smooth and free of lumps.
  2. Add the eggs to the blender and blend again until fully combined with the cottage cheese.
  3. In a mixing bowl, whisk together the flour, baking powder, and salt.
  4. Pour the blended cottage cheese mixture into the dry ingredients and mix until a soft dough forms.
  5. Lightly flour a clean surface and divide the dough into equal portions.
  6. Roll each portion into a thin, even round flatbread.
  7. Heat a non-stick pan over medium heat and lightly brush with olive oil if using.
  8. Cook each flatbread for two to three minutes per side until lightly golden and cooked through.
  9. Stack the cooked flatbreads and keep them covered to stay warm until serving.
