Quick Honey Garlic Pork Rice Bowl

Ingredients
  

  • 1 pound boneless pork loin, thinly sliced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • ¼ cup honey
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar or apple cider vinegar
  • ½ teaspoon black pepper
  • 2 cups white rice, uncooked
  • 4 cups water
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • ½ cup carrots, thinly sliced
  • 2 tablespoons green onions, sliced

Method
 

  1. Rinse the rice under cold water and cook it with 4 cups of water according to package instructions. Keep warm once cooked.
  2. Heat the vegetable oil in a large skillet over medium-high heat.
  3. Add the sliced pork and cook for 4 to 5 minutes, stirring occasionally, until browned and fully cooked. Remove the pork from the skillet and set aside.
  4. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.
  5. Add the honey, soy sauce or tamari, rice vinegar, and black pepper. Stir and let the sauce simmer for 2 to 3 minutes until slightly thickened.
  6. Return the cooked pork to the skillet and toss it in the sauce until evenly coated.
  7. Add the bell peppers, broccoli, and carrots, cooking for 3 to 4 minutes until the vegetables are tender but still crisp.
  8. Divide the cooked rice into bowls and top with the honey garlic pork and vegetables. Garnish with green onions before serving.

Notes

  • Tamari can be used instead of soy sauce for a gluten-free option
  • Pork shoulder can be substituted for pork loin for a juicier result
  • Add a small splash of water when reheating to loosen the sauce
