Heat oil in a large pan and season chicken with salt, pepper, and paprika. Cook for 4 to 5 minutes per side until golden and fully cooked, then remove and set aside.
In the same pan, sauté onion for about 2 minutes until softened. Add garlic and cook for 30 seconds.
Pour in chicken broth and scrape up browned bits. Stir in heavy cream, Parmesan, and sun-dried tomatoes (if using). Simmer for 3 to 4 minutes.
Add ramen noodles and cook for 2 to 3 minutes, stirring gently.
Slice chicken, return it to the pan, and warm through for 1 minute.
Taste and adjust seasoning. Top with herbs and serve hot.
