Ingredients
  

  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • ½ cup sun-dried tomatoes, chopped
  • 2 packs ramen noodles
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon chili flakes
  • 2 cups spinach
  • 2 tablespoons fresh basil or parsley, chopped

Method
 

  1. Heat oil in a large pan and season chicken with salt, pepper, and paprika. Cook for 4 to 5 minutes per side until golden and fully cooked, then remove and set aside.
  2. In the same pan, sauté onion for about 2 minutes until softened. Add garlic and cook for 30 seconds.
  3. Pour in chicken broth and scrape up browned bits. Stir in heavy cream, Parmesan, and sun-dried tomatoes (if using). Simmer for 3 to 4 minutes.
  4. Add ramen noodles and cook for 2 to 3 minutes, stirring gently.
  5. Slice chicken, return it to the pan, and warm through for 1 minute.
  6. Taste and adjust seasoning. Top with herbs and serve hot.

  • Use chicken thighs for juicier results, or chicken breast for a leaner option.
  • For a lighter broth, swap heavy cream with half-and-half.
  • Use low-sodium chicken broth to control salt levels.
