  • 1 ounce fresh lime juice
  • ¾ ounce simple syrup
  • 1 ounce aquafaba
  • 1 cup ice cubes
  • 2 fresh raspberries for garnish
  • 1 lime slice for garnish

Method
 

  1. Chill the glass in the refrigerator for a few minutes to keep the drink cold.
  2. Add fresh raspberries into a cocktail shaker and gently muddle to release juice and flavor.
  3. Pour tequila, passionfruit pulp, fresh lime juice, and simple syrup into the shaker.
  4. Add egg white or aquafaba into the shaker to create foam texture.
  5. Shake the mixture without ice for 15 seconds to build foam.
  6. Add ice cubes into the shaker and shake again for 15–20 seconds until chilled.
  7. Double strain the mixture into the chilled glass for a smooth texture.
