Ingredients
  

  • 1 cup cottage cheese
  • 1 cup spinach
  • 2 cups all-purpose flour
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • 1 egg
  • 1 tablespoon sesame seeds

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. If using frozen spinach, thaw and squeeze out excess water. If using fresh spinach, lightly sauté until wilted and cool.
  3. Blend cottage cheese until smooth.
  4. In a large bowl, mix flour, baking powder, salt, and optional seasonings.
  5. Add pureed cottage cheese, spinach, and egg, then mix until a dough forms.
  6. Divide dough into 6 equal portions and shape into flat circles with a hole in the center (flagel shape).
  7. Place on the baking sheet and add toppings if desired.
  8. Bake for 16–20 minutes, or until lightly golden and firm.

Notes

  • Blend the cottage cheese for a smoother dough and better texture.
  • Squeeze spinach very well to prevent sticky dough.
  • Add more flour 1 tbsp at a time if the dough feels too wet.

  • Store in the fridge for 4–5 days or freeze sliced flagels for easy toasting later.
